Conservatory, a former Irv’s Burgers site, will close permanently on New Year’s Day

Conservatory, a bar and restaurant complex in West Hollywood, California, at the former home of the iconic Irv’s Burgers stand, will close for good after New Year’s Eve after just four years there.

LA Eater reported:

Owner Paul Kalt of real estate development firm the Kalt Group says on Instagram that he’s going to “dedicate more time to ongoing projects and begin work on some exciting, new hospitality concepts.”

Kalt’s Conservatory first made waves back in 2018 for its stunning build-out and historic location along Route 66; the cafe building was the original home of Irv’s Burgers, which has since relocated and reopened with a classic look not far away.

The new site of Irv’s Burgers at 7998 Santa Monica Blvd. (aka Route 66) reportedly is thriving after reopening there in May, especially with longtime Irv’s operator Sonia Hong involved.

Hong’s family, which had owned Irv’s since 2000, left its longstanding landmark location at 8289 Santa Monica Blvd. in 2013 due to a landlord dispute.

Irv’s originally was a Queen’s Burgers stand that started in 1946 and changed its name a few years later.
